Ingredients:

    • 250 grams fresh Ivy Gourd (Dondakaya)

    • 2 tablespoons oil

    • 1 teaspoon mustard seeds

    • 1 teaspoon cumin seeds

    • A pinch of asafoetida (hing)

    • 10-12 curry leaves

    • 1 medium-sized onion, finely chopped

    • 2 green chilies, slit lengthwise

    • 1 tablespoon ginger-garlic paste

    • 1 teaspoon NSP turmeric powder

    • 1 teaspoon NSP red chili powder

    • 1 tablespoon NSP coriander powder

    • 1 teaspoon cumin powder

    • 1 tablespoon tamarind pulp

    • Salt to taste

    • Fresh coriander leaves for garnish

For the stuffing:

    • 2 tablespoons roasted peanut powder

    • 1 tablespoon sesame seeds

    • 1 tablespoon desiccated coconut

    • 1 teaspoon NSP red chili powder

    • 1 teaspoon NSP coriander powder

    • A pinch of salt

Instructions:

    1. Wash the Ivy Gourd (Dondakaya) thoroughly and make a vertical slit lengthwise, ensuring not to cut through completely. Keep them aside.

    1. In a mixing bowl, combine all the ingredients for the stuffing: roasted peanut powder, sesame seeds, desiccated coconut, NSP red chili powder, NSP coriander powder, and a pinch of salt. Mix well to create a uniform stuffing mixture.

    1. Gently stuff each Ivy Gourd with the prepared stuffing mixture. Ensure that the stuffing is evenly distributed within each gourd.

    1. Heat oil in a deep pan or kadhai over medium heat. Add mustard seeds and let them crackle. Then, add cumin seeds, asafoetida (hing), and curry leaves. Sauté for a few seconds until they release their aroma.

    1. Add finely chopped onions and slit green chilies to the pan. Sauté until the onions turn translucent and lightly golden.

    1. Now, add ginger-garlic paste and sauté for a minute until the raw smell disappears.

    1. Reduce the heat to low and add NSP turmeric powder, NSP red chili powder, NSP coriander powder, and cumin powder. Mix well to coat the spices evenly with the onions.

    1. Carefully place the stuffed Ivy Gourd into the pan, arranging them in a single layer. Drizzle the tamarind pulp over the gourds.

    1. Sprinkle salt as per your taste and gently stir to coat the gourds with the spice mixture. Cover the pan with a lid and let the Gutti Dondakaya cook on low heat for about 15-20 minutes. Stir occasionally to ensure even cooking.

    1. Once the Ivy Gourd becomes tender and the flavors have melded together, remove from heat. Garnish with fresh coriander leaves.

    1. Serve the piping hot Gutti Dondakaya with steamed rice or roti, and enjoy the delightful blend of flavors!
